My Favorite Chili Recipe

It took me a while to figure this out and I had to cook a couple but now I guess it's pretty good. Give it a try and let me know what you would add or leave out:

What you need (serves a bunch of people):

  • 1 green bell pepper
  • 1 large onion
  • 2 cloves of garlic
  • 1 cup of red win (or more)
  • 2 cans (a 16 ounce) of peeled tomatoes
  • 1 small can tomato paste
  • 2 lb ground beef (lean)
  • 3 str of bacon (turkey bacon recommended)
  • 1 can of kidney beans
  • 1 can of sweet corn
  • 2 tsp of paprika
  • 2 tsp chili powder or 1 small chili
  • 2 tsp dried basil
  • 2 tsp dried oregano
  • 2 tsp cumin
  • 1tsp freshly ground coriander
  • 1 cup fresh cilantro
  • little bit of oil, salt, pepper to taste
  • serve with baguette

How you do it:

  1. Pour a little bit of oil into a tall pot (I use a coated one)
  2. Fry the bacon, put aside
  3. Fry ground beef until well done, season with salt pepper and a bit cumin, put aside
  4. Use oil/ bacon/ meat sauce to fry onion, put on low heat, wait until golden
  5. Add garlic and green pepper, let cook on low heat for 5 min
  6. Add all spices, stir a couple of times and add red wine when mass gets too dry
  7. Add content of all cans (keep half of tomato paste for later)
  8. Cut bacon in little pieces and add together with meat and finely chopped cilantro
  9. Season with salt and pepper to taste, add more chili powder or fresh chili pepper to taste
  10. To thicken, add tomato paste, to make more liquid add red wine
  11. Let cook for at least an hour

This is a great for parties as you can warm it up often and it only tastes better over time. Serve with baguette or toast. Goes with red wine (same as you used for the chili) and beer.
